Ingredients
- For the pastry shells:
- -1/2 cup butter
- -1 cup water
- -1/4 tsp. salt
- -1 cup flour
- -4 eggs
- Preheat an over to 425°F.
- In a medium sized saucepan over medium high heat, melt the butter with the water and salt and bring to a boil. Add the flour to the pan and stir vigorously with a wooden spoon until the dough pulls away from the sides of the pan and forms a ball, about 2 minutes.
- Transfer the dough to a mixing bowl, and beat until the dough is lukewarm, about a minute. Then beat in the eggs one at a time and mix until everything is well blended.
- Spoon mounds of the dough onto parchment lined baking sheets. Bake for 20-25 minutes, or until the the shells are dry inside. Transfer to a rack and cool completely.
- For the Filling:
- -2 cups cherries, fresh or frozen
- -1 cup Spodee
- -1-2 tbsp. sugar
- -whipped cream
- -chocolate sauce
- In medium saucepan, add the cherries, Spodee, and sugar to taste. Bring to a boil and reduce until the sauce is thick enough to coat the back of a spoon, about 10-15 minutes. Remove from the heat and cool.
- To assemble the cream puffs, split the pastry shells in half. Fill the bottom half of the shell with whipped cream, then some of the cherry sauce and top with the other half of the pastry shell. Drizzle with chocolate sauce and serve immediately.
