Ingredients
- -1/2 cup butter
- -5 oz. bittersweet chocolate chips
- -1/2 cup Spodee
- -1 cup sugar
- -3 eggs, separated
- -3/4 cup flour
- -1/4 tsp. salt
- Heat oven to 350º F
- Butter and flour an 8" cake pan and line the bottom with parchment.
- In double boiler over medium heat, melt the butter with the chocolate and blend together. Add the wine in quarters, making sure to fully incorporate each portion before adding the next. Take care with this step to ensure the chocolate does not break. After adding all the wine, remove from the heat and set aside.
- In large mixing bowl, beat the egg yolks and butter until light yellow and fluffy and then incorporate the chocolate mixture. Then sift in the flour and add the salt, then stir just until everything is combined.
- In a separate bowl, beat the egg whites until they form stiff peaks. Then, working in thirds, gently fold the whites into the batter making sure not over mix.
- Pour the batter into the prepared cake pan and bake for about 35-40 minutes or until a cake tester inserted into the middle of the cake comes out clean.
- Cool cake in the pan before removing from the pan. Allow to cool completely before slicing. Serve with whipped cream or chocolate sauce or both.
